New items in menu: by Guram and grannies
We have already reported about our seasonal menu and about new chef Guram Urchukhishvili in “Kuvshin”. So, do you know that Guram added ten new dishes to this offer? You won’t find analogues of these meal in other Georgian restaurants in Moscow. It’s great, that some of these specials are presenting exclusively here, because Guram collected old recipes and cooking technologies by grandmothers in mountain villages.
First of all, three kind of oyster mushrooms dishes, which are called wood mushrooms in Georgia, appeared in menu. It is low in calories and rich in protein. Oyster mushrooms, stewed with flavored greens, is stuffing for khachapuri, besides, it is also basic ingredient of hot dish chashushuli. Moreover, we serve piquant cold oyster mushrooms salad with blackberry sauce.
Variety of soups have been added by popular in Kakheti tomato soup bozbash, boiled with lamb and beef. In conclusion, tkemali sauce gives it savory sourness.
Pay attention for chicken with blackberry sauce. Also, here are offered fried veal ribs with homemade adjika, which are sprinkled with Svani salt and pomegranate grains. Amazingly, djondjoli with walnuts and cilantro goes as garnish for that.
And, sure, it is recommend to try Abkhazura. This mellow meat dish is called masterpiece of Georgian cuisine. Chopped pork and beef with barberry and pomegranate grains, wrapped in a fat net, are barbecuing on grill until golden brown.
Another new item in menu is Georgian pilaf with lamb. This national dish named shilaplavi.
In addition, there are Telavian pelamushi and international hit – “Pavlova” appeared among the desserts section.
